Pistachios are seeds, not nuts.
Why it is true
Botanically, the pistachio is the seed of a drupe, the fruit of the Pistacia vera tree. What we eat is the seed enclosed in a hard shell. The confusion is common because, in cooking, many nuts and seeds are grouped in the same category. The same happens with almonds and walnuts.
