Pineapple contains bromelain, an enzyme that breaks down proteins. When we eat fresh pineapple, this enzyme begins to break down the proteins in the mucous membrane of our mouth, causing a tingling or burning sensation. Stomach acid destroys the enzyme after it is swallowed.
