The acidity of olive oil is measured in oleic acid.

Why it is true

The acidity of olive oil is expressed as a percentage of free oleic acid. Extra virgin olive oil has an acidity of less than 0.8 percent. The lower the acidity, the better the quality and flavour of the oil.
