Milbenkase is a German cheese ripened with thousands of live mites.

Why it is true

Milbenkase is made with quark seasoned with salt and caraway, placed in wooden boxes with rye flour. The mites consume and transform the surface of the cheese, creating a yellowish rind. The tradition dates back to the Middle Ages.
